I haven't made taco pie in a long time. It came to me while I was cruising down grocery isle. When you make a dish, do you follow the recipe? I rarely follow recipes, usually because I inevitably forget 1-5 ingredients needed when I go shopping! So over the years I've learned to improvise. It either works or doesn't.
So I don't actually have a recipe for taco pie...so I picked up some ingredients and when I got home realized I didn't buy refried beans or new tub of sour cream (current tub is borderline expired 😣). So I decided to use the Spanish rice I bought as a side and put it into the pie instead.
You can get any chips you want. I picked up these because it said thin and crispy. "Thin" means less fat and calories, right? I thought so, thanks.
Doritos also sound good on top too
Start...
Brown 1lb lean hamburger, add 1 pckt taco seasoning according to directions, add some salsa and stir
Cook you Spanish rice according to directions
Just when I got ready to start layering the pie...Sweet Pea decides to stand up on a toddler chair, to which Peanut starts yelling that Sweet Pea is standing on the chair. SP has been testing her limits with this ALL day. Typically she sits down when I tell her to, but not today...today she waits till I have to walk across the room. Only this time she doesn't sit down, she falls backwards. Crying! Wailing! There's no consoling her. On top of it all, Peanut wants me to change Emma dolls clothes. So SP got a front row seat to watch the pie making
Still not happy, but now she's not in danger
So anyhoo, start layering your pie
Tortilla
Meat
Rice
Cheese
(Repeat x 2)
Bake 350 x 30 min
Crunch some chips on top, along with more salsa and sour cream
Cut into slices and serve (and don't forget your favorite beverage, mine is mang-o-Rita, because it's been that type of day)
Peanut loved it, which says a lot. She is starting to become more picky lately. So it's probably a good thing I didn't do the refried beans! See, sometimes it works
